ABUNDANT LIFE FELLOWSHIP’S “FRUIT OF THE SPIRIT”

ZUPPA TOSCANA

1pound spicy Italian sausage, crumbled

1/2pound smoked bacon, chopped

1quart water

214-ounce cans chicken broth

2large russet potatoes, sliced thin

2garlic cloves, crushed

1medium onion, chopped

2cups kale, chopped

1cup heavy whipping cream

Salt and pepper to taste

In a skillet over medium-high heat, brown sausage, breaking into small pieces. Drain, set aside. In another skillet, brown bacon. Drain, set aside also. Place water, broth, potatoes, garlic and onion in a pot, simmer 10 more minutes. Add kale and heavy cream to the potatoes. Season with salt and pepper, heat through. Serve.

PORK CHOP PASTA

4-6boneless pork chops

1large green pepper, chopped

1small onion, finely chopped or grated

2quarts tomato sauce

2teaspoons sugar

1/4teaspoon salt

Garlic salt

Cooked pasta

Coat skillet with light olive oil. Sprinkle chops with garlic salt and brown. Put tomato in large kettle; add green pepper and onion, sugar and salt. After chops are browned on both sides; put in with sauce. Simmer 2 hours until chops are tender. Pour over favorite pasta.

SUGAR-FREE CHOCOLATE BANANA BREAD

13/4cups whole wheat pastry flour (or all-purpose flour)

1/4cup unsweetened cocoa powder

1/4baking soda

11/4baking powder

1/4cup coconut oil, melted (or canola)

1/2cup unsweetened applesauce

1/4cup plain low-fat Greek yogurt

2/3tablespoons water

3large ripe bananas, mashed

1teaspoon vanilla

1/4cup mini chocolate chips

Preheat oven to 350 degrees. In large bowl, mix dry ingredients. In another bowl stir together the oil, applesauce, yogurt, bananas and vanilla. Fold wet ingredients into the dry until just combined. Fold in chocolate chips. Do not overmix the batter. Batter will be thick. Pour into greased loaf pan and bake for 55 to 65 minutes or until toothpick comes out clean.
