Chocolate Chunk Cherry Oatmeal Cookies

The addition of chopped chocolate, dried cherries and walnuts makes this a super chunky oatmeal cookie.

Prep time: 15 minutes

Cook time: 10 minutes

2cups flour

2teaspoons McCormick Cinnamon, Ground

1teaspoon baking soda

1/2teaspoon salt

1cup (2 sticks) butter, softened

1cup firmly packed light brown sugar

2eggs

1cup granulated sugar

1teaspoon McCormick Pure Vanilla Extract

2cups quick-cooking oats

6ounces semi-sweet baking chocolate, coarsely chopped

1cup dried cherries

1cup chopped walnuts

Preheat oven to 350 degrees. Mix flour, cinnamon, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in oats, chocolate, cherries and walnuts.

Drop by rounded tablespoons onto ungreased baking sheets.

Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

Coconut Praline No Bake Cookies

Include this no bake cookie in your dessert tray this holiday season. It’s a sweet treat that’s reminiscent of the Southern praline confection.

Prep time: 20 minutes

Cook time: 10 minutes

Servings: (1 cookie) 48

3cups flaked coconut

2cups chopped pecans

2cups sugar

1/2cup (1 stick) butter, softened

1/2cup sweetened condensed milk

1/2cup light corn syrup

2teaspoons McCormick Pure Vanilla Extract

1/2teaspoon McCormick Cinnamon, Ground

Mix coconut and pecans in large bowl. Set aside.

Mix sugar, butter, sweetened condensed milk and corn syrup in large saucepan. Bring to boil on medium-low heat, stirring occasionally. Boil without stirring about 10 minutes or until mixture reaches 240 degrees on a candy thermometer and is deep caramel in color.

Pour mixture over coconut and pecans in bowl. Stir in vanilla and cinnamon. Let stand 5 minutes or until mixture is slightly cooled and thickened, stirring occasionally. Drop by tablespoonfuls onto wax paper-lined baking sheets. Press gently with bottom of glass to flatten slightly. Cool at room temperature for 1 hour. Cover with a clean kitchen towel. Let stand overnight to dry out cookies.

2teaspoons McCormick Pure Vanilla Extract

6ounces semi-sweet baking chocolate, coarsely chopped

Preheat oven to 350 degrees. Mix flour, cocoa powder, cinnamon, baking soda and salt in medium bowl. Set aside. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in chocolate.

Drop by rounded tablespoons about 2 inches apart onto baking sheets sprayed with no stick cooking spray.

Bake 8 to 10 minutes or just until cookies are set. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely.
