GRAPE SALAD

18-ounce package cream cheese, softened

1cup sour cream

1/3cup sugar

2teaspoons vanilla extract

2pounds seedless red grapes

2pounds seedless green grapes

3tablespoons brown sugar

3tablespoons chopped pecans

In a large bowl, beat the cream cheese, sour cream, sugar and vanilla until blended. Add grapes and toss to coat. Transfer to a serving bowl. Cover and refrigerate until ready to serve. Sprinkle with brown sugar and pecans just before serving.

BREAKFAST CASSEROLE

6eggs

6slices toast, cut into bite-sized pieces

1pound mild ground sausage

8ounces grated cheddar cheese

2cups milk

1teaspoon salt

1teaspoon ground black pepper

Brown sausage and grease a 9-inch by 13-inch baking dish. Layer toast, then sausage, and then cheese. Mix eggs, milk and salt. Pour egg mixture over above ingredients. Refrigerate overnight. Cover dish and bake at 350 degrees for 40 to 45 minutes. Can substitute sausage with ham or bacon. Also can add broccoli, peppers, tomatoes, etc.

PEPPERONI ROLLS

8cups warm water

3/4cup sugar

3tablespoons dry yeast

24cups flour

4tablespoons salt (level)

1 to 11/4 cups oil

Pepperoni

Cheese (your choice)

Mix water and sugar until sugar is dissolved. Add yeast. Let raise and bubble. In separate bowl stir together flour and salt to mix up. Add yeast mixture to oil and then add to flour. Mix and knead well. Let raise 10 to 15 minutes. Knead again until smooth. Cut into 6-inch balls and let raise 1 hour. Break off dough so you get 6 pieces from each ball. Roll out and place pepperoni and cheese on dough and then roll back up. Bake at 350 degrees until browned. Makes 36 to 40 rolls.

This is a collection of recipes compiled by committee members of the Carrie Peska Memorial Nursing Scholarship in memory of Carrie Peska. Their hope is to help future nurses give back to others the way they believe Carrie did during her 22-year nursing career.
