chicken tetrazzini

3Tablespoons butter

1medium onion, finely chopped

1medium green pepper, sliced

11/2Tablespoons flour

11/4cups light cream

1/4cup sherry

13-ounce can sliced mushrooms, undrained

Chicken breasts, cubed

1pimento, sliced

1egg yolk, slightly beaten

Salt and pepper to taste


Melt butter in a skillet. Add onion and green pepper. Cook for 5 minutes. Blend in flour. Add cream, mushrooms, chicken and pimento. Cook until thickened, stirring constantly. Pour a small amount of mixture over egg yolk. Return egg yolk to skillet, stirring constantly. Season to taste.

Meanwhile, cook spaghetti until tender. Drain well and toss with sauce. Sprinkle with cheese. Put under the broiler for a short time.

cream of wild rice soup

2cups cooked wild rice (about 1/2 cup uncooked)

1large onion, chopped

1/2green pepper, diced

1rib celery, diced

5fresh mushrooms, sliced thin

1stick butter

1cup flour

8cups hot chicken or turkey broth

Salt and pepper to taste

1cup light cream or half & half

11/2Tablespoons dry white wine

Cook wild rice as directed on package. Saute onion, green pepper, celery and mushrooms in butter until soft. Sprinkle with flour, stir until mixed and bubbly. Slowly add broth, blending well. Add wild rice, seasoning. Heat, stir in cream. Add wine. Heat gently but do not boil. Makes about 8 servings.
