Vermont Bonne-Bouche, an ash-ripened goat cheese from Vermont Butter and Cheese Co., is coated in vegetable ash, which hardens into a white, edible rind during aging. It pleased CT tasters with its mellow flavor and creamy texture. This artisanal cheese comes packed in its own straw matting so it can continue ripening. It also makes a nice presentation.
